Red Cabbage Sweet and Sour from Germany

This cabbage dish is a main staple in Germany and it can be eaten with mashed or cooked potatoes.

It also goes very well with a hearty vegan meatloaf!

Ingredients:

1/4 cup vegan butter (Earth Balance, Miyoko's, or organic soy margarine)

1 2-pound organic red cabbage, thinly sliced

5 tablespoons maple syrup or agave nectar

2/3 cup balsamic vinegar

Directions:

Melt the vegan butter in a large pot over medium heat. Add the cabbage and saute until slightly wilted, about 5 minutes. Add the sugar and toss to coat evenly. Add vinegar and reduce the heat to medium-low. Cover and simmer until the cabbage is tender while stirring often, about 30 minutes. Season to taste with salt and pepper.
