Tomato Wrap with Hummus and Rice
For this wrap we are using New Gem Food Wraps, which offer a healthy alternative for bread and tortillas by making wrappers from tomatoes, carrots or apple & kale!
 
Lay out your wrapper sheet on a plate and spread with your favorite hummus. Then add a healthy helping of chopped leafy greens and vegetables like kale, cucumber, carrots, celery. Add a spoon of cooked brown rice and  fresh basil. Top with a spicy cashew cream, wrap up and enjoy!
 
Note: since the wrappers are very thin and this wrap is very juicy, it may be best to enjoy this wrap with fork and knife!
 
Spicy Cashew Cream:
 
Add to a high speed blender:
  1. 1 cup of cashews
  2. 1 serrano chile (or 2 if you like it spicier)
  3. 1 tsp ground cumin seeds
  4. 1 tsp ground coriander seeds
  5. juice from 1 lemon or lime
  6. ½ cup of water
  7. ½ tsp turmeric powder
Blend until creamy and enjoy as dressing or dip!
