Sprouts and microgreens are hundreds of times more powerful in their nutritious value than their adult counterparts! This red pepper soup pairs sprouts with the creaminess of avocado and miso and the tasty smoky flavor of ground chipotle pepper.
Ingredients for 1 person:
- 1 cup organic red bell pepper
- ½ cup sprouts or microgreens, any you like
- ½ ripe avocado
- 1 tbsp fresh lemon or lime juice
- 1 tbsp non-GMO miso paste
- 1 tsp fresh basil or oregano
- ¼ tsp chipotle pepper powder
- 1/2 – 1 cup filtered water to reach the desired consistency
- Optional Garnish: dry-roasted sunflower seeds and basil leaves
Blend it all in a highspeed blender, garnish with sunflower seeds, basic leaves and enjoy!
