This delicious healthy and very lemony cauliflower carrot soup recipe can be made in your high speed blender in little time!
 
YIELD 4 servings
TIME 40 minutes
 
INGREDIENTS
6 cups filtered water
1 tbsp coriander seed powder (or use mortar to crush dried whole seeds to fine powder)
1 medium white onion, diced
2 garlic cloves, finely chopped
1 tbsp fresh ginger
1/2 tsp turmeric powder
5 organic medium carrots, chopped
1 ½ tsp sea salt (or more to taste
3 tbsp non-GMO miso paste
1 small (or half of a large) head cauliflower, trimmed and cut into florets
½ tsp lemon zest
4 tbsp fresh lemon juice
 
PREPARATION:
  1. Boil water with all the vegetables, coriander seed powder, salt and miso paste.
  2. Once vegetables are cooked , puree in high speed blender along with cooking water in batches and add the lemon juice and zest
Garnish with sunflower seeds, black ground pepper, chile powder, cilantro leaves
