Italian Tomato Avocado Salad
A different style of salad is this non-green salad based around tomatoes, avocado and olives! It is a hearty meal with tons of vitamins, inflammation busters, and essential fatty acids with a surprising flavor boost from the coconut oil.
- 2 organic tomatoes, diced
- 1 ripe avocado, cubed
- 3 tbsp black olives, seeded and chopped
- 3 tbsp fresh basil leaves, chopped
- 1 tbsp organic scallions, sliced
- 2 tsp fresh oregano leaves
- 1 tbsp virgin coconut oil, liquified
- 2 tsp organic apple cider vinegar (Bragg)
- Black ground pepper and sea salt to taste
- 1 tbsp nutritional yeast (Bragg)
Mix all ingredients in a mixing bowl and toss to mix well. Serve with extra nutritional yeast and black pepper sprinkles
