Italian Tomato Avocado Salad

A different style of salad is this non-green salad based around tomatoes, avocado and olives! It is a hearty meal with tons of vitamins, inflammation busters, and essential fatty acids with a surprising flavor boost from the coconut oil.

  • 2 organic tomatoes, diced
  • 1 ripe avocado, cubed
  • 3 tbsp black olives, seeded and chopped
  • 3 tbsp fresh basil leaves, chopped
  • 1 tbsp organic scallions, sliced
  • 2 tsp fresh oregano leaves
  • 1 tbsp virgin coconut oil, liquified
  • 2 tsp organic apple cider vinegar (Bragg)
  • Black ground pepper and sea salt to taste
  • 1 tbsp nutritional yeast (Bragg)

 

Mix all ingredients in a mixing bowl and toss to mix well. Serve with extra nutritional yeast and black pepper sprinkles
