Green Asparagus is low in calories and has a unique, delicious taste. It can easily be eaten raw or lightly steamed. Asparagus is a great source of nutrients including fiber, folate and vitamins A,B1, C,K, selenium and copper. When blended with other vegetables and spices you will get a richly colored, creamy soup that can equally serve as a detox soup or as a gourmet appetizer!
2 cups filtered water
1 cup green raw asparagus
1 cup dark leafy greens like chard, collards or kale
1 clove garlic
1/2 tsp fresh ginger
1 green spring onion
1 tbsp organic miso paste
1 tbsp fresh cilantro
1/4 tsp ground cumin
black pepper and chili flakes to taste.
Mix all ingredients in a high-speed blender. Serve with your favorite condiments or microgreens! I use raw sunflower seeds and pepitas.
