This is a delightful Asian-inspired raw plant-based soup with probiotic and fat-burning power! The freshness of the cucumber and cilantro get a spicy upgrade with curry and cayenne. The creaminess comes from avocado with a splash of umami from organic miso paste!
Ingredients for 1 person:
- 1 small organic cucumber
- ½ cup organic tomato
- ½ ripe avocado
- 2 tbsp fresh organic cilantro
- 1 tsp curry powder
- 1 tsp non-GMO miso paste
- A pinch cayenne pepper
- 1 cup filtered water
- Optional Garnish: a dollop of sauerkraut and a sprinkle of pistachios and black sesame seeds
Blend all ingredients in a highspeed blender, garnish with sauerkraut, pistachios and sesame seeds
