Creamy Tomato Bisque
Tomatoes are boasting heathy lycopene, vitamin A and fiber and more. When blended with ripe avocado, garlic and thyme you get a creamy aromatic tomato bisque that makes for a very satisfying meal!
Ingredients for 1 person:
- 1 1 /2 cups organic tomatoes
- ½ avocado
- 1 small garlic clove
- ¼ tsp dried thyme
- Pinch of sea salt
- 1 cup filtered water
- Freshly ground black pepper
- Optional garnish: fresh basil leaves, cherry tomatoes, nutritional yeast
Blend all ingredients in a highspeed blender and garnish with ground black pepper, one halved cherry tomato, a fresh basil leaves and a sprinkle of nutritional yeast
