Broccoli Cashew Cream Soup

This soup is almost entirely raw except for the steamed broccoli, which we recommend for broccoli to bring out the flavors and to soften the texture. Use ALL parts of your broccoli including the stems!
You can serve this healthy and hearty soup cold or hot to your liking. It packs a huge nutritional punch and is satisfying as appetizer or full meal!
Ingredients for 4 servings:
1 cup filtered water
2-3 cups steamed broccoli
1/2 cup soaked cashews
1/2 cup organic raw kale
1/2 stalk organic celery
1/2 serrano chile (optional)
1/2 tsp fresh ginger
1/2 tsp onion granules
1 tsp sea salt
1 tsp curry powder
juice of 1.5 limes
1 tsp ground black pepper
1/2 tsp turmeric powder
Preparation:
To soak the cashews, place them into filtered water for 2-3 hours.
To steam the broccoli, cut florets and stalk into medium-sized chunks while bringing a pot of water to boil. Place the broccoli in the steaming basket over the boiling water pot and close with a lid. Steam on medium or low heat for 5 minutes max.
Rinse the soaked cashews off.
Add all ingredients in a high speed blender, starting with the water. Blend on high speed for 1-2 minutes until it is creamy. If you prefer a little chunkier texture, blend it only shortly.
Pour contents into serving bowls and garnish with sunflower seeds, ground black pepper, carrot flakes, cilantro.
