Baby Bok Choy Salad

Anything with choy (cabbage) in the name comes loaded with healthful nutrients and its very durable in your fridge too!

Serves 4

Salad:
8 baby bok choy, chopped
1 cup of any other choy or cabbage, chopped
1 organic carrot, chopped
1/2 organic cucumber, chopped
1-2 green onions or shallots, chopped
A half or whole jalapeno pepper, chopped
½ cup fresh cilantro
Himalayan sea salt and ground black pepper to taste 

Dressing:
1/8 cup virgin cold pressed olive oil
1/8 cup apple cider vinegar
1 tsp agave nectar or maple syrup
1 tsp Braggs Liquid Aminos or Tamari (gluten-free soy sauce)
½ tsp ginger
1 tsp sesame seeds 

Directions: 
In a highspeed blender, mix together all dressing ingredients.
In a salad bowl, combine all salad ingredients, toss with dressing, cover, and let it soak in the fridge for 30 minutes before serving.
