Ginger Tea Recipe With Toasted Pine Nuts

From Thailand

This hot ginger tea recipe is not only healthy, but also wonderfully soothing and aromatic in the cold season.

Ginger root has great digestive and immune system boosting qualities. It is a great cold remedy, as it suppresses coughing, reduces fever, and treats inflammation and congestion. The toasted pine nuts give this Asian inspired ginger tea recipe a silken smooth touch.

Serves: 4 / Ready in: 30 minutes

Great for: heart healthy, gluten-free, vegan

  • 2 tablespoons fresh thinly sliced ginger root
  • 1 1/2 to 2 cups water
  • 1 tablespoon maple syrup or 1 teaspoon of stevia
  • 1 tablespoon fresh lime juice (juice of 1/2 lime)
  • 1/4 cup toasted pine nuts

Boil the ginger in water for at least 10 minutes. For a stronger tea, keep simmering for 20 minutes or more, and use more ginger.

Switch off heat and add the lime juice and your sweetener of choice to taste.

Strain and serve in small tea cups. Add 2 teaspoons of pine nuts to each cup of tea.
