Cucumber Cilantro Curry Soup

This is a delightful Asian-inspired raw plant-based soup with probiotic and fat-burning power! The freshness of the cucumber and cilantro get a spicy upgrade with curry and cayenne. The creaminess comes from avocado with a splash of umami from organic miso paste!

Ingredients for 1 person:

  • 1 small organic cucumber
  • ½ cup organic tomato
  • ½ ripe avocado
  • 2 tbsp fresh organic cilantro
  • 1 tsp curry powder
  • 1 tsp non-GMO miso paste
  • A pinch cayenne pepper
  • 1 cup filtered water
  • Optional Garnish: a dollop of sauerkraut and a sprinkle of pistachios and black sesame seeds

Blend all ingredients in a highspeed blender, garnish with sauerkraut, pistachios and sesame seeds

This raw blended soup stays fresh in the fridge in an airtight container for up to 5 days.
